Pasta Fagioli
Ingredients
- 1 lb Ground Beef
- 1 medium Onion chopped
- 32 oz beef broth
- 24 oz diced tomatoes canned, undrained
- 15 oz canneloni beans canned
- 3 carrots medium, chopped
- 2 celery ribs chopped
- 2 Tbsp basil dried
- 2 garlic cloves minced
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 C ditalini pasta
- parmesan grated for topping (optional)
Instructions
- In a large skillet, cook beef and onion over medium heat until beef is no longer pink and onion is tender. Drain.
- Combine the beef with the remaining ingredients except the pasta and parmesan in a crockpot. Cover and cook on low for 7-8 hours.
- Add pasta and cook on high for 30 minutes
- Serve with parmesan if desired.
