Egg Roll in a Bowl

Ingredients
- – 1 lb ground turkey or pork or chicken/beef
- – 1 tbsp sesame oil or olive oil
- – 3 cloves garlic minced
- – 1 tbsp fresh ginger minced (or 1 tsp ground)
- – 1/2 onion thinly sliced
- – 1 bag 14–16 oz coleslaw mix (or shredded cabbage & carrots)
- – 3 tbsp low-sodium soy sauce or coconut aminos
- – 1 tbsp rice vinegar optional but flavorful
- – 1 tsp sriracha or chili paste optional for heat
- – Green onions & sesame seeds for garnish
Instructions
- Heat sesame oil in a large skillet over medium heat. Add ground meat and cook until browned, breaking it up as it cooks (about 5–7 minutes).
- Stir in garlic, ginger, and onion. Cook for 2–3 minutes until fragrant and the onion is soft.
- Add coleslaw mix, soy sauce, rice vinegar, and sriracha if using. Stir well and cook for 5–7 minutes until the cabbage is tender but not mushy.
- Taste and adjust seasoning if needed. Garnish with sliced green onions and sesame seeds. Serve hot.
Notes
– Add a fried or soft-boiled egg on top.
– Serve over brown rice, cauliflower rice, or lettuce wraps.
