Egg Roll in a Bowl

Ingredients

  • - 1 lb ground turkey or pork or chicken/beef
  • - 1 tbsp sesame oil or olive oil
  • - 3 cloves garlic minced
  • - 1 tbsp fresh ginger minced (or 1 tsp ground)
  • - 1/2 onion thinly sliced
  • - 1 bag 14–16 oz coleslaw mix (or shredded cabbage & carrots)
  • - 3 tbsp low-sodium soy sauce or coconut aminos
  • - 1 tbsp rice vinegar optional but flavorful
  • - 1 tsp sriracha or chili paste optional for heat
  • - Green onions & sesame seeds for garnish

Instructions

  • Heat sesame oil in a large skillet over medium heat. Add ground meat and cook until browned, breaking it up as it cooks (about 5–7 minutes).
  • Stir in garlic, ginger, and onion. Cook for 2–3 minutes until fragrant and the onion is soft.
  • Add coleslaw mix, soy sauce, rice vinegar, and sriracha if using. Stir well and cook for 5–7 minutes until the cabbage is tender but not mushy.
  • Taste and adjust seasoning if needed. Garnish with sliced green onions and sesame seeds. Serve hot.

Notes

- Add a fried or soft-boiled egg on top.
- Serve over brown rice, cauliflower rice, or lettuce wraps.
- Drizzle with spicy mayo (Greek yogurt + sriracha + lemon).
