Heat sesame oil in a large skillet over medium heat. Add ground meat and cook until browned, breaking it up as it cooks (about 5–7 minutes).
Stir in garlic, ginger, and onion. Cook for 2–3 minutes until fragrant and the onion is soft.
Add coleslaw mix, soy sauce, rice vinegar, and sriracha if using. Stir well and cook for 5–7 minutes until the cabbage is tender but not mushy.
Taste and adjust seasoning if needed. Garnish with sliced green onions and sesame seeds. Serve hot.
Notes
- Add a fried or soft-boiled egg on top.
- Serve over brown rice, cauliflower rice, or lettuce wraps.
- Drizzle with spicy mayo (Greek yogurt + sriracha + lemon).
