Greek Cucumber Salad

Ingredients

  • 1 large English cucumber or 2 Persian cucumbers, sliced thin
  • 1 cup cherry tomatoes halved
  • 1/4 small red onion thinly sliced
  • 1/4 cup crumbled feta cheese
  • 2 tbsp fresh parsley or dill chopped (optional)

Dressing:

  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar or lemon juice
  • 1/2 tsp dried oregano
  • Salt & black pepper to taste

Instructions

Prep the Veggies

  • In a medium bowl, combine cucumber, cherry tomatoes, and red onion.

Make the Dressing

  • In a small bowl or jar, whisk together olive oil, red wine vinegar (or lemon juice), oregano, salt, and pepper.

Toss & Finish

  • Pour the dressing over the veggies and toss gently to coat. Sprinkle with feta and fresh herbs. Serve immediately or chill for 15–30 minutes for extra flavor.

Notes

Optional add-ins:
• Diced bell pepper
• Kalamata olives (if you want to add them back)
• Chopped avocado (right before serving)
