Greek Cucumber Salad
Ingredients
- 1 large English cucumber or 2 Persian cucumbers, sliced thin
- 1 cup cherry tomatoes halved
- 1/4 small red onion thinly sliced
- 1/4 cup crumbled feta cheese
- 2 tbsp fresh parsley or dill chopped (optional)
Dressing:
- 2 tbsp olive oil
- 1 tbsp red wine vinegar or lemon juice
- 1/2 tsp dried oregano
- Salt & black pepper to taste
Instructions
Prep the Veggies
- In a medium bowl, combine cucumber, cherry tomatoes, and red onion.
Make the Dressing
- In a small bowl or jar, whisk together olive oil, red wine vinegar (or lemon juice), oregano, salt, and pepper.
Toss & Finish
- Pour the dressing over the veggies and toss gently to coat. Sprinkle with feta and fresh herbs. Serve immediately or chill for 15–30 minutes for extra flavor.
Notes
Optional add-ins:
