1large English cucumberor 2 Persian cucumbers, sliced thin
1cupcherry tomatoeshalved
1/4small red onionthinly sliced
1/4cupcrumbled feta cheese
2tbspfresh parsley or dillchopped (optional)
Dressing:
2tbspolive oil
1tbspred wine vinegar or lemon juice
1/2tspdried oregano
Salt & black pepper to taste
Instructions
Prep the Veggies
In a medium bowl, combine cucumber, cherry tomatoes, and red onion.
Make the Dressing
In a small bowl or jar, whisk together olive oil, red wine vinegar (or lemon juice), oregano, salt, and pepper.
Toss & Finish
Pour the dressing over the veggies and toss gently to coat. Sprinkle with feta and fresh herbs. Serve immediately or chill for 15–30 minutes for extra flavor.
Notes
Optional add-ins:
• Diced bell pepper
• Kalamata olives (if you want to add them back)
• Chopped avocado (right before serving)
